Thanksgiving 2020 was a dinner for two. I had really hoped to have a big celebration, with everyone helping prepare dishes... But never-the-less, Koen and I spent the afternoon preparing my favorite dishes. My favorite part of the day, of course, is taking the time to reflect on everything we're thankful for one year later. This year may have been difficult, but I am so happy for Koen, our new puppy, our new apartment, and of course our family and friends!

Mashed potatoes and Jerusalem artichokes
Homemade cranberry sauce with a splash of 20 year old Graham's Tawny Port
We don't eat meat, so instead of turkey we fried up some vegan schnitzel - perfect base for all of the sauces (including Koen's gravy) and sides!
